The Il Monte Caro winery encompasses land that rises from 150 to 300 meters above

sea level. We always experience an exceptionally dry and breezy microclimate due to

the continuous air coming from the north, along with warmer soil temperatures

compared to the one of surrounding hills. Our 7 hectares property is composed of  

highly calcareous and stony soil with great variety of flints and limited basaltic rocks. 

The majority of our vines are planted in Pergoletta Veronese and Trentina methods,

whereas the Guyot system is used on the terraces located on the steepest slope of

our vineyard.

We take care of our vines in all their phases: from delicate winter pruning

to the summer works focused on controlling the microclimate that embraces

our vineyard. Only the best bunches are manually selected during harvest to then

obtain genuine wines, with personality and that tell the story of our hill and family.

We cultivate our land focusing on fertilisation of the soil and taking care

of biodiversity.  Along with our vines we are surrounded by fruits trees,

about 500 olive trees and woods.
